Strawberry Cake

One look is enough to get an inspiration!This cake was just that! It inspired me enough to go around looking for strawberries at this time of the year.And I was successful!!


This cake is a simple sponge cake with gooey strawberries and icing sugar on top.

Ingredients

  • 6 tablespoons unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup plus 2 tablespoons sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 1 pound strawberries, hulled and halved


Method

Preheat oven to 180 degrees. Butter a 9 inch baking pan. Sift flour, baking powder, and salt together into a medium bowl.

Beat butter and 1 cup sugar on medium-high speed until pale and fluffy. Reduce speed and mix in egg, milk, and vanilla.

Gradually mix in flour mixture. Transfer batter to the pan. Arrange strawberries on top of batter, cut sides down and as close together as possible. Sprinkle remaining 2 tablespoons sugar over berries.

Bake cake 10 minutes. Reduce oven temperature to 160 degrees. Bake until cake is golden brown and firm to the touch, about 1 hour.

Sprinkle icing sugar on top once the cake has cooled down and gorge on this beauty!!!!
