Easter Buns

A very Happy Easter to all my friends!!!



Festivals and goodies go along together. So eggciting bit for the kids at Easter is of course Easter eggs and buns,color the eggs and gorge on the buns !!!! I went one step ahead and made these cute nests to go with the eggs!!




Easter Buns

Makes 16 small buns


FOR THE DOUGH:


150ml milk
50g butter
Zest of 1 orange
2 cloves
 2 cardamom pods -crushed
400g flour
7g dry active yeast
65g mixed dried fruit..I used currants and dried cranberries
60g dried orange peel
50g brown sugar


1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 egg


FOR EGG WASH:


1 egg, beaten with a little milk
FOR THE CROSS ON THE BUNS:


Icing sugar and a few drops of milk.




Heat milk, butter,zest,cloves,crushed cardamoms till butter melts.Leave it to infuse till luke warm.


In a bowl add flour,yeast,sugar ,spices  dried fruits and peels & egg .Strain the milk and add it to the flour mix and knead till smooth,cover with cling flim, and leave it to prove it overnight in the fridge.


Punch down the dough and knead it some more. Make small balls and put them on lined baking tray and brush egg wash on them. Make small incisions  with kitchen scissors on the buns and brush egg wash once more.Cover them with towel and leave it to prove for another 45 mins.


Preheat the oven at 200C .Bake the buns for 15-18mins till done.


For the Cross , take 2 T of icing sugar and add a few 1-2 t of milk making a thick consistency. Put it in icing bag and make a cross on the buns.Or just drizzle white chocolate!!
